2 tbsp. Butter; 4 Shallots, minced; 2c. long-grain white Rice; 4 tsp. ground Cumin; 1/2c. shredded, unsweetened Coconut; 3 1/2c. Chicken Broth; 1/2c. Raisins; 4 tbsp. chopped fresh Parsley; Salt/Pepper.

Melt butter in medium saucepan over medium heat, and cook shallots until soft. Add rice and cumin, and cook for 2 minutes. Add coconut, broth, raisins, and bring to a boil. cover and cook over low heat until all liquid is absorbed, 12-15 minutes. Fluff with fork, add parsley, and taste for salt/pepper. Can be made in rice cooker, just cook shallots first and then add all ingredients to cooker.
