1/2 c. chopped onion
1/2 c. chopped green pepper
1 clove garlic, minced
1 tbsp. cooking oil
1 tsp. chili powder
1 28-oz. can tomatoes, undrained and cut up
3/4 c. uncooked long grain rice
1 4-oz. can diced green chile peppers, undrained
Several dashes bottled hot pepper sauce (Franks Hot Sauce is the best!)
1/2 c. shredded cheddar cheese

In a large skillet cook onion, green pepper and garlic in hot oil, until tender. Add chili powder; cook 1 minute more. Stir in undrained tomatoes, rice, chili peppers, hot pepper sauce, 1 c. water, 1/4 tsp. salt and 1/8 tsp. pepper. Bring to a boil; reduce heat. Simmer, covered for about 20 minutes or until rice is tender and liquids are absorbed. Sprinkle cheese on top before serving.
