3 eggs, well beaten
2 C grated zucchini
3 tsp vanilla
1 C oil
1 C sugar
1 C brown sugar
3 C flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
3 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
nuts (opt)
chocolate chips (opt)

Directions:
Directions:
Beat eggs, then add sugar, oil and vanilla. Sift dry ingredients into large bowl, then mix in egg mixture. Stir in zucchini and nuts or chocolate chips if desired. Pour into greased mini loaf pans and bake at 325 for 25-30 min, or until it starts to pull away from the pan. Let cool, then slice and serve.
