5 C warm water
1/2 C oil
1/2 C sugar or honey
2 TBSP yeast
6 C freshly ground whole wheat flour
1 TBSP salt
3 heaping TBSP wheat gluten
extra flour (another 4-6 C)

Directions:
Directions:
Mix all ingredients with a large mixer (like a Bosch). Gradually add flour just until the dough starts to pull away from the sides. Set timer for dough to knead for 10 min. Shape into loaves (4-5) and put in greased loaf pans. Put pans in oven and let raise (about 30-45min) Turn oven to 350 and bake for 30-45 min.
