6 garlic cloves, coarsley chopped
4 C. fresh spinach (or more if desired)
1 and 1/2 C. canned cannelloni beans, drained and rinsed
2 cans great northern beans
1 can vegetable broth
12 oz. cooked penne noodles
parmesan cheese (optional)

Directions:
Directions:
Spray saucepan with nonstick spray. Add garlic; cook over medium heat, stirring constantly until softened (about 5 minutes). Add spinach and beans. Cook 2-3 minutes. Add broth; bring to boil. Reduce heat, simmer 3 minutes. Add cooked pasta, stir. Let stand 5 minutes before serving. Sprinkle with parmesan cheese.

I just mince the garlic cloves because I don't like getting big garlic chunks with each bite. Also, be sure to wash the spinach because if you don't you get a lot of little gritties in your teeth. :)
