4 tbsp. butter; 2 lg. onions; 1/4 c. flour; 1/4 tsp. nutmeg; 1 c. heavy cream; 2 c. milk; 5 (10oz.) pkgs.frozen spinach, defrosted; 1 c. freshly grated parmesan cheese; 1 tbsp. kosher salt; 1/2 tsp. pepper; 1/2 c. grated Gruyere cheese.

Preheat oven to 425.
Melt butter and saute oinions until translucent. Add the flour & nutmeg and cook, stirring, for 2 minutes. Add teh cream & milk and cook unitl thickened.
Squeeze as much liquid from spinach as possible and add to the sauce. Add 1/2 c. of parmesan cheese and mix well. Season to taste with salt & pepper.
Transfer spinach to baking dish and sprinkle with remaining 1/2 c. parmesan cheese and the gruyere on top. Bake for 20 minutes. Serve.
