2 Tbsp. Butter; 1 med. Onion, chopped; 4 Celery stalks, chopped; 1 (49 1/2oz.) can Chicken Stock; 2 c. Pumpkin, cooked & cut into large pieces; 1 tsp. White Pepper; 1 tsp. ground Cumin; 1 Tbsp. Lime Juice; 8 oz. lowfat Cream Cheese; Fresh Cilantro for garnish

Melt butter in soup pot. Saute onion & celery until tender. Add 2 cups chicken stock and simmer 10 minutes. Process cooked pumpkin and mixture from soup pan in blender until smooth. Add all other ingredients, including blended mixture and remaining chicken stock to soup pot. Bring to a boil. Remove from heat and whick in cream cheese until dissoved. Garnish with cilantro.
