1 yellow cake mix
1 3 ounce box peach Jell-O
1 tsp. vanilla
1/2 cup sweetened condensed milk
2/3 cup vegetable oil
4 eggs
2 cup coarsely cut peeled peaches
1/2 cup chopped pecans (optional)
1/2 cup coconut (optional)

ICING:
8 ounce cream cheese
2 T. butter
1 box (4 cups) powdered sugar
1 tsp. vanilla

Directions:
Directions:
Using an electric mixer, mix cake mix and Jell-O. Add vanilla, condensed milk and oil. Mix until dry ingredients are moistened. Add eggs one at a time, beating well. Fold in peaches, coconut and nuts. Pour into three 9" layer cake pans (or 2 8x2" pans.) Bake at 350 for 35-40 minutes or until cake springs back. When cake is completely cooled, ice cake with cream cheese icing.
