1 1/2 cups water
1 1/2 cups uncooked instant rice
1 (10 oz) can chicken; drained
1 (15 oz) jar cheese dip
2 (15 oz) can black beans; drained, rinsed
1 package taco seasoning mix
2/3 cup water
8 tortillas
1 cup chredded colby-Monterey Jack cheese

Heat oven to 375.

Spray large cookie sheet with cooking spray.

In saucepan, bring 1 1/2 cups water to boil. Stir in rice; remove from heat. Cover, let stand 5 minutes.

Stir in chicken and drip. Cook over medium-high heat for 2-3 minutes, stirring constantly. Cover to keep warm.

In another saucepan, combine beans, taco seasoning mix and 2/3 cup water. Bring to boil. Cover and keep warm.

Place 2 tortillas on cookie sheet. Spoon generous 1 cup rice mixture onto each tortilla; spread to edges. Top each with 2nd tortilla and 1 1/2 cups bean mixture, spreading to edges. Repeat with 3rd tortilla and remaining rice mixture. Top with 4th tortilla and 1/2 cup cheese.

Bake at 375 for 7-8 minutes or until cheese is melted; cut each quesadilla into 4 wedges.
