Other vegetables of choice

Directions:
Directions:
Cut eggplant in slices of 1/2" to 3/4". Soak in cold salted water. Pat dry. Coat with cornmeal. Brown in olive oil. Set aside the slices. Saute vegetables of choice. Put on top of an eggplant slice. Cover with another eggplant slice.
