Wooden Bowl
2 whole cloves garlic, in monkey dish
1/4 c croutons
salt and pepper
1/2 head romaine lettuce, in chilled salad bowls.
1 tsp Dijon mustard
1/4 c wine vinegar
1/2 c lemon, wrapped in napkin
1 c salad oil
1/2 c parmesan cheese
2 egg yolks
6 anchovies
croutons

Directions:
Directions:
Salt bowl and add garlic cloves Mash together garlic with 2 forks until fluffy and paste-like. Add anchovies and continue to mash to paste-like consistency. Add egg yolks and mix well working in circular motion with 2 forks. Add Dijon mustard and wine vinegar and mix. Add oil slowly until mayonnaise consistency. Squeeze in lemon juice and mix. Toss in romaine, parmesan cheese, and croutons. Make cross of anchovy fillets on each salad and serve. Offer ground pepper.
