3 cups flour
1/3 cup sugar or to taste
2 1/2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
1 1/2 sticks butter
1 cup buttermilk
1 zested lemon rind

Directions:
Directions:
Place flour, sugar, baking powder, baking soda, and salt in a large bowl. Work cold butter into flour mixture, with pastry blender, or fork. Add zested lemon rind. Add buttermilk, stir in with fork or wooden spoon, just until dough forms. Don't over mix. Form into a ball and flatten into a round disc. Flour a work surface and roll out into desired thickness, brush top with melted butter if desired, and sprinkle with sugar. Cut with a biscuit cutter. Can cut into wedges, or use a large cookie scoop. Place on a baking sheet. Bake 375 for 12-15 minutes or depending on your oven.
