1 8 1/4-oz can crushed pineapple, undrained
1 8-oz container soft cream cheese
2 C chopped cooked chicken(canned chicken)
1 8-oz can water chestnuts drained and chopped
1/2 C chopped celery
1/4 C sliced green onions
1/2 C toasted Pecans
1/4 tsp salt and 1/4 tsp Ground Pepper
1/4 tsp Beau Monde Seasoning
Lettuce

Directions:
Directions:
Drain pineapple reserving 1/4 C of liquid. Combine cream cheese and reserved liquid until well blended. Combine rest of ingredients with cream cheese mixture except lettuce. Chill. Serve over lettuce leaves, sprinkle top with few pecans.

Can stuff fresh tomatoes on bed of lettuce and use a couple slices of cantaloupe for garnish. Great for a light lunch in summer. Can double recipe easily.
