4 medium carrots sliced 1/4 inch, cooked
2 tablespoons butter
1 tablespoon finely chopped onion
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1 cup milk
1 cup shredded cheddar cheese

Topping:
3 cups bread crumbs
1/4 cup butter, melted

Directions:
Directions:
Heat oven to 350.

In 1 1/2 quart casserole place carrots; set aside.

In saucepan melt 2 tablespoons butter; add onion. Cook over medium heat until crispy tender. Stir in flour, salt, mustard and pepper until bubbly. With whisk, stir in milk. Continue cooking until mixture thickens and comes to a boil. Boil 1 minute. Remove from heat; stir in cheese until melted. Pour sauce over carrots.

In bowl, stir together bread crumbs and 1/4 cup butter; sprinkle over carrots.

Bake 30-40 minutes or until bubbly.
