4 tomatoes
1 deep dish pie crust
basil
salt
pepper
1/2 cup green onions
1 cup mayo
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup shredded pepper jack cheese
bacon bits or cooked bacon crumbled

Directions:
Directions:
Boil water and drop tomatoes in for a few seconds just to peel off skin. Slice tomatoes, add salt to taste and drain in colander in sink. After draining place tomatoes in bottom of pie shell. Add salt, pepper, basil, and green onions. Mix mayo and cheeses together then spread over tomatoes. Sprinkle with bacon and bake at 350 for about 20-30 minutes.
