2/3 cup sugar
4 tbsp. cornstarch
2 tbsp. baking powder
1/4 tsp. salt
confectioners' sugar
1/4 cup finely chopped nuts
2 c. heavy cream, whipped
Chocolate Frosting
Chopped pistachios or mock pistachios

Line 15x10x1 inch jelly roll pan with well-greased waxed paper, leaving 2inch overhang at each end of pan. In large bowl of electric mixer beat eggs until foamy; gradually add sugar and continue beating about 10 minutes, or until very thick and lemon-colored. Sift together cornstarch, cocoa, baking powder, and salt; sift again into egg mixture and fold, blending well. Spread batter in prepared pan and bake in preheated 400 oven 8-10 minutes, or until pick inserted in center comes out clean (do not overbake). Loosen edges with spatula, lift cake from pan by paper ends and invert on kitchen towel sprinkled with confectioners' sugar. Remove paper. Cool 5 minutes, then roll from narrow end with towel in between. Cool on rack. Fold nuts and the peel into cream, Unroll cake and spread with cream mixture; reroll without towel. Place on serving dish and frost, making decorative grooves with small spatula. Decorate as desired with pistachios. Chill at least 30 minutes. Cut 1 inch slices.
