8-oz. pkg. macaroni
1 c. mayonnaise
1/4 c. chopped onions
1/4 c. pimento
1 lb. New York State cheese (grated)
1/4 c. chopped green peppers
1 can mushroom soup
Ritz crackers (crumbled)

Directions:
Directions:
Cook macaroni. Grate cheese. Cook onions and pepper in just enough water to cover, reserving liquid. Combine macaroni, grated cheese and onions and peppers. Add mayonnaise, soup and pimento to this mixture and enough reserved water until of desired consistency. Top with Ritz crackers (crumbled). Bake at 350 until it bubbles.

This recipe can be prepared by adding onions and peppers directly to the macaroni and cheese mixture without cooking them in water.
