6 to 8 chicken thighs (skinned)
3 tomatoes, peeled & quartered
1 T. olive oil
2 c. mozzarella cheese, shredded
1 green pepper
1 garlic glove, crushed
1-1/2 c. water

Directions:
Directions:
Brown chicken in olive oil and garlic. Place rice and water in casserole dish. Place chicken over rice. Saute green pepper and tomatoes and add to casserole dish. Cover with cheese. Cover dish loosely with tin foil. Bake in 375 oven for 25-30 minutes.
