1 10 oz Frozen chopped spinach
1 bunch Green onions, chopped (white part only)
4 Eggs, beaten
1 16 oz Cottage cheese
4-6 slices Bacon,fried
2 c. Cheddar cheese, shredded
1/4 c. Croutons, crushed

Directions:
Directions:
Cook spinach until soft, drain well, stir in green onions, eggs, cottage cheese, bacon, cheddar cheese. Pour mixture into a 9 inch pie or quiche pan lightly greased.
Bake uncovered in 325 preheated oven for 45 minutes. Remove from oven and sprinkle croutons on top, bake additional 15 minutes, until eggs are set.
