3 Eggs
1 C Oil
2 C Sugar
3 tsp Vanilla
2 C shredded Zucchini with peel
1 tsp Baking Soda
3 C Flour
1/4 tsp Baking Powder
3 tsp cinnamon
1 C chopped nuts

Directions:

Combine eggs, zucchini, oil, sugar, and vanilla. Mix well Add dry ingredients and nuts. Bake in 2 loaf pans 350 55 minutes Test for doneness.

I have tried several zucchini bread recipes and this one is absolutely the best. It is my best friend Cheryl's recipe. If the bread does not seem done at 60 minutes, I remove from pan and zap in the microwave for 2 minutes each for each loaf. Works Great.
