6 medium sized potatoes
2 eggs
1 teaspoons salt
teaspoon baking powder
1 tablespoons flour
1 thick slice onion

Directions:
Directions:
Scrub potatoes carefully but do not peel. Cut into cubes about 1 inch in size. Break eggs into food blender - add flour, baking powder, salt, onion and about cup cubed potatoes. Cover and start at high speed. With blender still running, add the rest of the potatoes as rapidly as possible, a few at a time. Turn off blender, stir. Pour from container onto a hot greased griddle. Bake until brown - turn and brown the other side. Serve hot with pot roast gravy. (Makes about 10 medium pancakes).
