1 package frozen chopped spinach
1 clove of garlic
Handful of parsley
˝ bread crumbs
4 eggs

Directions:
Directions:
Cook 1 package frozen chopped spinach until tender. Drain thoroughly until dry. Chop 1 clove garlic and a handful of parsley together and add to spinach. Combine ˝ cup bread crumbs to mixture. Beat 4 eggs with fork and add to the other ingredients. Fry in olive oil. Preheat skillet until hot, then turn heat to low and cook slowly as you would an omelet. When one side is done, turn with spatula.
