5 - 6 zucchini
1 onion
2 cloves garlic
Handful parsley
Olive oil
2 beaten eggs
¼ cup cracker meal or bread crumbs
1 cup parmesan cheese
Salt and pepper to taste

Directions:
Directions:
Cube zucchini and parboil for 10 minutes. Chop onion, garlic and parsley. Sauté in olive oil. Add zucchini, 2 beaten eggs, cracker meal or bread crumbs and parmesan cheese (save a little for the top), salt and pepper. Place in casserole, sprinkle with remaining cheese and put in 350 degree oven. Bake for 45 minutes.
