2-3 lbs. chicken cut up
½ cup flour
1 ½ teaspoons salt
¼ teaspoons pepper
2 eggs
¼ cup milk
1 tablespoon parsley
½ cup Parmesan cheese
½ cup olive

Directions:
Directions:
Coat chicken with flour, salt and pepper. Combine eggs, milk and chopped parsley. Dip chicken into egg mixture and roll in Parmesan cheese. Place oil and garlic in skillet, brown chicken well. Remove when brown and pour off excess oil.

Sauce:

Combine 2 ½ can of pureed tomatoes with 1 ¼ teaspoon oregano, ½ teaspoon pepper, 2 pinches sweet basil and ½ cup red wine. Meanwhile, sauté ½ lb. mushrooms and 1 small onion minced in pan. Pour tomato mixture over chicken that has been replaced in skillet, add mushrooms and onion. Cook slowly for 25 minutes or until chicken is tender. Garnish with Parmesan cheese and serve over hot buttered noodles.
