Chablis
2 tablespoons olive oil
2 tablespoons butter
Salt
Pepper
3 tablespoons gren onion
¼ teaspoon thyme
¾ lbs. fresh mushrooms
Clove of garlic

Directions:
Directions:
Select loin veal chops approximately ½ lb. per person and have butcher bone. Dip chops in Chablis wine and brown in 2 tablespoons olive oil and 2 tablespoon butter in heavy skillet. Add salt and pepper to taste. When lightly browned add 3 tablespoons chopped green onion and ¼ teaspoon freshly chopped thyme. In another pan, sauté lightly in butter ¾ lbs. fresh mushrooms, whole if small, sliced if large. Add salt and pepper to season and one whole clove of garlic, cut in half. When done, remove garlic, cut in half. When done, remove garlic and add mushrooms to meat mixture. Add remaining wine from dipping and cook 5 minutes longer. Serve immediately.
