2 c flour
3/4 tsp baking powder
1/4 tsp salt
3/4 c oleo, softened
1 c sugar
1 large egg
1 tsp vanilla
1 1/2 c shredded sweetened coconut

Directions:
Directions:
Combine flour, baking powder and salt in medium bowl. Beat butter and sugar in bowl until light and fluffy. Beat in egg and vanilla. With mixer at low speed, beat in dry ingredients just until combined. Stir in coconut. Drop dough by level tablespoonfuls onto ungreased cookie sheets. With bottom of glass dipped in flour, flatten each cookie to 1/4" thickness, then press with back of fork to form ridges. Bake in a 375 oven, 10-12 minutes, until edges are golden. Transfer to racks to cool.
