6 slices diced bacon, 1/4 c. minced onion, 1 C. lentils( washed in cold water), 1 quart plus 2 cups beef stock, 1/4 c. flour 2 tbsp. chopped dried parsley, salt and pepper 1 c. diced celery, 2 x-large potatoes diced, 1 c. carrot diced, 1 c. cubed ham, dash of nutmeg.

Saute bacon over med. heat until crisp, remove bacon to soup pot and saute onion in bacon grease,Add rinsed lentils to onions and grease toss in flour and mix well. Add this and all other ingredients to soup pot and cook slowly for 1 1/2 hours our until lentils are soft.

This can be cooked in your crockpot, bring to a boil on high and then turn down to low and cook for 5 hours or ?. .

We enjoy this as left overs so I make a big batch by 1/12 the recipe. hope it will become one of your winter favorites also.

The herb rolls are a good bread with this soup.
