6 Fresh mint sprigs
3-4 small wedges of fresh lime
2-3 oz simple syrup (1c sugar + 1c water, boil then cool)
3 oz light rum
Club soda

Directions:
Directions:
In a tall thin glass crush part of the mint and lime wedges with a fork or muddle. Add simple syrup and stir. Add ice, rum and stir. Top off with chilled club soda or seltzer. Add a slice of lime and remaining mint. (Vodka can be substituted for the rum)
