1 Lb chicken breast or chicken tenders
1/2 c. chicken broth
2 t. soy sauce
1 t. sesame oil

1 bunch of cleaned spinach leaves

1 Tbls toasted sesame seeds

Peanut dipping sauce

Directions:
Directions:
Simmer chicken, broth, soy sauce and sesame oil together until chicken is cooked. Cool and cut chicken into 1 1.2 x 12" pieces.

Blanch spinach leaves for 30 seconds then rinse quickly in cold water to stop the cooking.

Place each piece of chicken in spinach leaf.
Sprinkle with sesame seeds and wrap leaf around the chicken.

Serve with peanut sauce. (Can be found in Asian section of grocery store.)
