2 Tbls. water
4 eggs
1 (14 oz) can sweetened condensed milk
1 c. water
1 t. vanilla
1/2 c. shredded coconut or 3 drops coconut extract

Directions:
Directions:
Butter 1 qt casserole or 6 custard cups.
Heat oven to 350.

Combine sugar and 2 Tbls of water in small heavy skillet. Cook stirring constantly, until carmelized and syrupy. It should be a light golden brown.
Pour into warm buttered custard cups: Tilt to coat the bottom and sides while the sugar is still warm.

Beat eggs well in medium bowl.
Add condensed milk, water, vanilla, and coconut extract; mix throughly.

Pour into custard cups.

Put 9 x 13 pan on oven rack. Fill pan 1/2 full with hot water. Place cups in pan, add more hot water if needed so the water level is the same level as the custard.

Bake at 350 for 1 hr or until knife inserted in the center comes out clean.

Cool custard, loosen with knife and invert on serving platter or plates, spoon carmel over each serving.
