1 whole chicken broiler / fryer cut into 8 pieces
1/2 c + 2 tbsp olive oil
10 sprigs of fresh thyme
40 peeled garlic cloves
salt and pepper

Directions:
Directions:
Preheat 350
Season chicken with salt and pepper. Toss with 2 tbsp of olive oil and brown on both sides in a wide frying pan over high heat.

Remove from heat, add oil (1/2 c), thyme and garlic cloves.

Cover and bake 1 1/2 hours; remove and let stand 5-10 min; carve and serve.
