1 pkg Baby Spinach
1/2 small. thinly sliced red onion
11 oz. can of mandarin oranges drained

Dressing:
4 Tbls. wine vinegar
2 t. Dijon mustard
2 Tbls. honey
5 Tbls. vegetable oil
1 1/2 Tbls poppy seeds
dash of cayenne pepper

Directions:
Directions:
Put spinach in large salad bowl and remove any large stems. Add onions and oranges.
Combine dressing ingredients in container and shake well. Pour over the spinach and toss.

I often make the dressing ahead and let the oranges and onion marinate for several hours or overnight then toss with spinach right before serving,
