1 lb. kidney beans, uncooked
1 ham bone
1/2 lb.ham, diced
1 lg. onion, chopped
1/2 c. green onions, chopped top and all
1/4 c. green peppers, chopped
1/4 c. parsley
1/2 t. basil
2 bay leaves
1/4 c. oil
1 t. salt
1/2 t. pepper
1 ring smoked sausage, cut into bite size pieces

Directions:
Directions:
Was and drain the beans, cover with water and bring to a boil. Add the balance of the ingredients except the smoked sausage. Simmer for about 3 hours. Add the sausage and simmer for another 30-40 minutes. Beans should be tender with some white sowing and still whole. Serve over rice with chopped green onions sprinkled over the top.
