4 cups powdered sugar
4 cups flaked coconut
3/4 cup cold mashed potatoes (without milk or butter)
1 1/2 tsp vanilla
1/2 tsp salt
1 lb dark candy coating

Directions:
Directions:
In a large bowl, combine first 5 ingredients. Line a 9 inch square pan with foil, butter foil. Spread coconut mixture into pan. Cover and refrigerate overnight or several hours. Cut into 2 x 1 inch rectangles. Cover and freeze. In a double boiler, melt candy coating. Dip bars in coating; place on waxed paper to harden. Store in an airtight container.

Or you can cheat like I do. Place wax paper on a cookie sheet. Place a large teaspoon of coconut mixture as if making cookies onto the pan. Freeze until hardened. Roll into a ball and dip into chocolate.
