1lb chicken tenders or boneless chicken breast cut into strips
1 cup of buttermilk
*Soak chicken in buttermilk for 1 hour

Breadcrumb mixture
2 cups Panko breadcrumbs or fresh breadcrumbs
1/2 cup of parmesan cheese
1/2 tsp salt
1/2 tsp black pepper

Directions:

Mix all the breadcrumb mixture ingredients together.
Preheat oven to 400 degrees.
Brush cookie sheet with 3 T olive or canola oil.

Remove each piece of chicken from buttermilk and toss into breadcrumb mixture. Lightly shake excess breadcrumbs off and place onto cookie sheet. Do not let the pieces of chicken touch each other.

Bake in 400 degree oven for 15 minutes.
Turn over and bake another 10-15 more minutes.
