1 cup uncooked rice
1 1/2 cups chopped onions
1 cup apple juice
1 teaspoon thyme
1/4 teaspoon pepper
3 1/2 cups chicken broth
1 1/2 lbs boneless, skinless chicken breasts, cut into 2 inch chunks
1 package (10 oz) frozen peas,
3 tablespoons parsley

Directions:
Directions:
Spray 3 quart saucepan with nonstick cooking spray. Heat over medium-high heat. Heat rice in saucepan for 5 minutes, stirring occasionally; reduce heat to medium. Stir in onions, juice, thyme and pepper. Cook 2 minutes or until liquid is evaporated. Stir in 1 cup broth. Cook 4-5 minutes until liquid is evaporated. Stir in 1 cup broth; until liquid is evaporated.

Stir in chicken, peas and rest of broth.

Cover and cook about 5 minutes or until liquid is evaporated and rice is tender; remove from heat.

Stir in parsley.
