Directions:
Directions:
Mix equal parts of Ricotta cheese & flour (3 # Ricotta and 3 # flour) dough will be crumbly at first but have patience, it will come together and form a dough, knead. Invert a bowl over dough and let rest 1/2 hour. Cut off a piece and roll into a pencil thin roll. Cut 1" pieces and roll each piece using your thumb (roll away from you). Spread on cloth dusted with plenty of flour and let rest.
Cook in boiling water (Aldente') just till they come to the top.
