1 large onion, chopped
2 Tbls cooking oil
2 cloves of garlic, minced
3 Tbls curry powder
6 medium sweet potatoes or yams, peeled and cut into 1" pieces
2, 14 oz cans of chicken broth
1, 14 oz. can of unsweetened coconut milk
1, 2" piece of lemon grass (optional)
2 t grated fresh ginger
1/8 t of salt1/4 t white pepper

In 4 qt. Dutch oven, cook onion in hot oil over medium heat for 3 minutes, stirring occasionally. Add garlic and curry powder, cook 3-5 minutes more until onion is tender. Add sweet potatoes, chicken broth, coconut milk, lemon grass, and ginger. Bring to a boil, reduce heat, simmer covered for 10-15 minutes until the sweet potatoes are tender. Cool slightly. Discard lemon grass.

Remove 1/2 of the mixture (about 4 cups) in small batches and puree in blender, then add back to the pot. Add pepper and salt; heat through.
