Peanut Butter Pie Recipe

1 baked 9" pie shell

1/2 c peanut butter
3/4 c powdered sugar

1/2 c sugar
1/4 c cornstarch
1/2 t salt
3 egg yolks
2 1/2 c milk
1 t vanilla

3 egg whites
6 Tbls sugar

Directions:
Directions:
Cut powdered sugar and peanut butter together until it is crumbly. Put all but 1/4 c in the bottom of the cooked pie shell.

Cook sugar, corn starch, salt and beaten egg yolks in double boiler over medium heat until thick. Add vanilla and pour into pie shell over peanut butter mixture.

Beat egg whites until stiff adding 1 Tbls of sugar at a time.

Spoon over the pie and sprinkle with remaining peanut butter mixture.

Bake at 350 until meringue is brown.
