Literally anything you have left over, in the fridge, or in the cooler during a camping, fishing or river trip.

Plus:
flour tortillas
cheese
salsa
sour cream (ranch dressing is good too, particularly for salad burritos)
Anything else you want to top them with.

Build your own burrito from bits of this and that leftovers.

Homemade tortillas are best, rolled out on an oar paddle with a beer bottle and cooked on a skillet over the fire. Charred edges are good.

This was a favorite meal during our Colorado River trip and has since provided some interesting combos out the of fridge: leftover Chinese food burritos, beef stew burritos, spaghetti burritos, turkey with stuffing, gravy and cranberry sauce burritos and even gourmet versions like smoked duck and shrimp Creole.
