4-5 small (4-5") yellow or zucchini squash
2 tbs oil
Salt and pepper to taste
Grated parmesan (or sharp cheddar)

Directions:
Directions:
Wash squash, trim ends and cut in half lengthwise.
Heat oil in a skillet over medium-high heat. Add squash, cut side down cook until it starts to brown, about 10 min. Turn over and cook until tender. Sprinkle with salt and pepper, place on a platter and sprinkle with cheese.
