1 3/4 elbow Mac
2 C small curd Cottage Cheese
1 C Sour Cream
1 egg slightly beaten
3T minced onion
2 C Sharp Cheddar Shredded
1/2 tsp Sea Salt
1 1/2 T Butter
1/4 C Bread Crumbs

Directions:
Directions:
Heat oven 350
Cook Macaroni el dente'. Blend Cottage Cheese in blender for 1 min. on puree. Mix all ingredient's except butter & crumbs. Pour into a buttered 2 qt casserole. Melt butter, add bread crumbs. Sprinkle over Mac & Cheese.
Bake for 45 minutes or until bubbly in center.

** I like to cover for the first 30 minutes and then add bread crumbs and cook last 15 minutes with no cover.
