1 - 10" pie crust
3/4 c. light brown sugar
1/2 tsp. salt
3 T. flour
1 c. sour cream
2 egg yokes
3 cans peaches drained well

Directions:
Directions:
Mix brown sugar, salt and 2 T. flour. Mix in sour cream until well blended. Beat egg yolks until thick and lemony in color. Add to the sour cream mixture and blend thoroughly. Mix 1/2 of sour cream mixture with drained peaches. Sprinkle 1 T. flour over the unbaked pie crust. Arrange the peaches on top. Pour remaining half of the sour cream mixture over the peaches. Bake at 425 for 10 minutes. Reduce heat to 350 and bake for 30 minutes.
