8 cups cubed peeled potatoes
1/4 cup butter
2 tablespoons flour
3/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups milk
1 lb processed cheese, cubed (Velveeta)

Directions:
Directions:
In saucepan, cook potatoes in boiling water until tender. Drain and place in greased 2 1/2 quart baking dish.

In saucepan, melt butter. add flour, salt and pepper; stir to form paste. Gradually add milk. Bring to a boil and stir for one minute. Add cheese; stir until melted.

Pour over potatoes. Cover and bake at 350 for 45-50 minutes, until bubbly.
