4 boneless, skinless chicken breasts
8 T. apricot preserves (sugar-free preserves do not work well in this recipe)
8 T. Dijonnaise

Directions:
Directions:
Mix Dijonnaise and apricot preserves in a bowl. Place chicken in baking pan. Pour sauce over. Cover with foil. Bake at 350 degrees for 45 minutes, basting once or twice. Serve with rice.

Super quick and easy--this is my favorite recipe to take to people who are unable to cook because of illness, family crisis, etc. Also, it's a reasonably heart-healthy recipe.
