3/4 cup sugar
3/4 cup vinegar
3/4 water
1 1/2 teaspoon salt
1 teaspoon pepper
1 large onion, sliced thinly
2 cans (13 1/4 oz) sliced beets

Directions:
Directions:
In saucepan, combine the first 6 ingredients; bring to a boil. Reduce heat; cover and simmer for 5 minutes. Remove from heat; add beets. Let stand at room temperature for 1 hour. cover and chill for 6 hours or overnight.
