1/2 cup chopped onion
2 tablespoons butter
1/3 cup flour
1/2 teaspoon salt
1/8 teaspoon nutmeg
2 1/2 cups milk
1 cup water
3/4 cup cubed processed cheese (Velveeta)
1 package frozen chopped spinach, thawed and drained

in 3 quart saucepan, saute onion in butter. Stir in flour, salt and nutmeg. Gradually whisk in milk and water. Add cheese; cook and stir until melted. Add spinach; cover and simmer 4-5 minutes until heated through.
