3 tbsp extra virgin olive oil
1 medium onion, diced
4 cloves of garlic, minced
1/2 tbsp of red pepper flakes
1 pound ground beef
3 slices of smoked bacon, sliced into 1/2 inch pieces
6 ozs red wine (one small bottle)
2 28 oz cans of whole tomatoes, pureed in a blender
3 ozs Fresh basil, cut in a chifonade
1 tsp dried oregano
1 tsp fennel seeds (optional)
Salt and Pepper to taste

Heat olive oil in a large pot to medium high. Add diced onions and cook until translucent. Add garlic and cook for another minute.

Add ground beef, and cook until well done, using a wooden spoon to crush the meat into as small of chunks as possible. Deglaze pot with red wine and allow to reduce for a couple of minutes.

Add raw bacon pieces, and stirring the pieces into ground beef. Do not brown bacon.

Add tomatoes from the blender, the chifonade of basil, oregano, fennel seeds, and salt and pepper to taste. Bring to a boil.

Reduce heat to simmer, cover and allow to cook for 45 minutes. Remove lid and allow to cook for 15 minutes more.

Serve over your favorite pasta.
