2 red peppers, cut into large pieces
2 large carrots, thickly sliced on diagonal
2 zucchini, thickly sliced on diagonal
2 yellow squash, thickly sliced on diagonal
1 red onion, cut in large pieces

olive oil
kosher salt
freshly ground pepper

*can also substitute new or sweet potatoes

Toss vegetables with olive oil (just enough to coat), kosher salt, and freshly ground black pepper. Roast in a pre-heated 400 oven for 30-40 minutes, until tender on the inside and crisp on the outside.
