6 C. cold cooked rice
2 T. cold water
1 lb. shrimp,peeled and deveined
2 eggs, well beaten
4 T. soy sauce
2 T. white wine
1/3 t. salt
1/8 t. pepper
4 T peanut oil for frying
1/4 c. green onion, chopped
1/4 c. onion, chopped

Directions:
Directions:
Add 2 tablespoons of water to the rice to loosen the grains as much as possible. In a medium bowl, mix the shrimp and eggs together. In a small bowl mix the soy sauce, wine.salt and pepper and set aside.

Heat a heavy skillet or wok to medium high. Add oil, then onion and fry the onion to a light golden brown. Add the shrimp and cook for 2 minutes, stirring constantly. Add the rice and cook for 1-2 minutes more. Add soy sauce mixture and heat through. Remove to a serving dish and garnish with the chopped green onions.
